Quinoa Corner

I was never really a big fan of quinoa; you have to really know how to prepare it for it to come out right; but that was until I met Glenda from Quinoa Corner thanks to eatingwithlittlemariii.

A former paralegal who gave up her career decided to chase her dream and open up her own restaurant. You can taste the love and the fresh ingredients Glenda uses to put together each recipe of perfection! And talk about local love; Glenda is able to produce all these quinoa related recipes because she buys in bulk from local farmers markets! She actually gets ALL her ingredients from said farmers markets, so you know those meals are going to be great with some of the freshest and best ingredients possible!

Speaking of love, I am absolutely in LOVE with Glenda. She has the biggest heart and was actually one of my sponsors for my 24 Hour Run For St Judes event; she came through big with a her “Special Fried Quinoa” & her “Quinoa Con Pollo” meals. Everyone that attended the event said they loved the food and I can assure you, you will too!

I started meal prepping with Glenda recently and you definitely get more bang for your buck. On average I’m paying $9/meal for a whole week of food (both lunch and dinner)! You can place your orders here online and go pick up your food in-store! Can’t make the trip? Don’t worry! They deliver via Ubereats too!!!

And what I love even more is that her store is literally located on the corner of a strip mall in Hialeah! And all the decor you see laid out in the store were handcrafted by her and her husband! How cool is that?!

Quinoa Tamale (2 tamales): 2 Quinoa Tamale stuffed with a Sweet Plantain center served with Napa Cabbage, Cilantro Crema and Homemade Salsa. ($10.00)

Quinoa Thai Vegan: The Vegan Version of the Thai Chicken, but made with Portobello Mushrooms. ($8.00)

Quinoa Burger:  This vegan Patty is packed with flavor, served with a Garlic Mustard, Pickles and Organic Ketchup. ($8.00)

Quinoa Sriracha Bites (8 bites): Spicy Quinoa Bites Made with Red and White Quinoa, Gruyere Cheese and Sriracha Sauce, served with a Garlic Mustard Aioli for dipping. ($8.00)

Quinoa Moroccan Chickpea Bowl: Chickpea Stew with Chickpea, White Beans, Baby Potato, served with White Quinoa. ($9.00)

Quinoa Ginger Bowl: Zucchini noodles, book chop, baby carrots, red quinoa, ginger chicken and homemade ginger dressing. ($8.00)

Quinoa Spaghetti Bolognese: Quinoa Spaghetti, Tomato, Basil, Mushroom sauce. ($9.00)

The Cuban Chop Chop: Seasoned White Quinoa, Mojo Marinated Chicken, Black Beans, Homemade Salsa and Cilantro Garlic Sauce. ($9.00)

Dirty Quinoa With BBQ Chicken & Sweet Potato Hash: Chicken breast over dirty quinoa with a side of sweet potato hash served with bbq guava sauce. ($10.00)

Quinoa Mac & Cheese: Quinoa Pasta, Blend of Monterey Jack and Cheddar, Carne Asada, Panko Topping and Green Onions. ($10.00)

Quinoa (No Meat) Loaf: Giving you all the taste of Meat and Potato without giving you either. Our (No Meat) Loaf is made with Red & White Quinoa, Portobello Mushrooms, and served with a Cauliflower Mash and Organic BBQ Sauce on a Bed of Spinach. ($9.00)

Quinoa Almond Pancakes (6 pancakes): The Power House of Pancakes, Made with Cooked Quinoa, Almond Flour, Almond Milk served with Organic Maple Syrup. ($9.00)

Quinoa Con Pollo: Our take on the Cuban Popular Dish “Arroz Con Pollo”, Quinoa, Chicken Thighs, Peas, Pimentos, Onions, Green Peppers. ($8.00)

Quinoa Mexi Bowl (Chicken or Steak): Spicy Taco Seasoned Quinoa with Marinated Steak or Chicken with Sautéed Peppers, served with a Cilantro Crema, Four Cheese Blend and Homemade Salsa. ($9.00)

Special Fried Quinoa: Our take on the Traditional Special Fried Rice.
Quinoa, Shrimp, Pork, Ham, Bean Sprouts, Pea Pods, Green Onions and Eggs. ($9.00)

Quinoa Turkey Bolognese Over Zucchini Noodles: Ground Turkey, Quinoa, Tomato & Basil Sauce over Zucchini Noodles topped with Mozzarella Cheese. ($8.00)
